Eggs. 6 hardboiled
Tomatoes. 1 cup of canned tomatoes
Onion. 1 medium
Tomato Paste. 1 tablespoon
Olive oil. 2 tablespoons
Coriander Paste. 1 tablespoon
Ginger Paste. 1 tablespoon
Garlic Paste. 1 tablespoon
Black Pepper. 1 teaspoon
Cumin. 1 teaspoon
Garam Masala. 1 teaspoon
Tumeric. 1 teaspoon
Paprika. 1 teaspoon
Salt. 1/4 teaspoon
Fresh Coriander. For garnish

Tomatoes and onions form the base of this dish and you can use, chopped tomatoes for a chunky egg curry. You can also use grated or pureed tomatoes for a smooth texture.
There are several ways to make egg curry, with recipes varying by preference and even by family.
If you prefer a meaty flavor, you can also add ground beef, ground pork, or chicken.
I sometimes add baby spinach leaves toward the end of cooking, it’s a personal preference.
Tips For Making The Best Egg Curry
Cooking the tomatoes longer helps enrich the taste of the curry sauce.
Adding some tomato paste to your dish gives it a rich color and texture.
If using canned tomatoes, some are more acidic than others, adding a pinch of sugar helps balance the flavors.
Tomatoes form the base of this dish and you can use chopped, grated, or pureed.
You can also cut the boiled eggs into halves so they can absorb more gravy and flavor.
How To Make Egg Curry
In a large saucepan or skillet, heat 2 tablespoons of cooking oil, add coriander paste, garlic, ginger paste, and onion, and sauté for about a minute, stirring constantly.
Once the onion is cooked, add black pepper, cumin, paprika, and the rest of the spices.
Add the tomatoes, cover with a lid, and cook for 3 minutes. Add tomato paste and a pinch of brown sugar and cook for about a minute. Season the with salt as needed.
Once the curry gravy is well-cooked and seasoned, add the boiled eggs and simmer for 5 minutes.
Garnish with fresh coriander. Serve with rice, chapati, or naan bread.
