1/4 cup apple cider vinegar
3 tablespoons brown sugar
1 small onion chopped
1/4 teaspoon salt
1/4 teaspoon dried basil
1/2 teaspoon marjoram
1/2 teaspoon thyme
1/4 teaspoon black pepper
1/4 cup olive oil
How To Make Onion Dressing
In a blender, combine vinegar, sugar, and onion; cover and blend until smooth, add the seasonings, and mix well.
Gradually add oil in a steady stream until the dressing is thick. Store it in the refrigerator.

1. In a medium saucepan boil 2 cups of salted water and add 1 cup of rinsed quinoa. Cover with a lid and cook on medium to low heat for 15 minutes. Remove from heat and let it cool down, fluff the quinoa with a fork and set aside.
2. Now we will make the dressing. In a blender, combine vinegar, sugar, and onion; cover and blend until smooth, add the seasonings, and mix well.
Gradually add olive oil until the dressing is thick and well mixed. Store in the refrigerator.
3. Combine quinoa, kale, corn, cherry tomatoes, and carrots in a large bowl.
4. Drizzle the quinoa salad with dressing, and gently mix until the salad is coated with the dressing.
