It is simple yet delicious, it’s a dish you can make in less than 30 minutes, and it’s one of my favorite meals to make when I have little time

Potatoes. 3 large, peeled, and evenly cubed
Carrots. 1 medium, cut into cubes
Tomatoes. 1 canned
Onion. 1 small chopped
Cooking oil. 3 tablespoons
Spring onion. 2 stalks, chopped
Paprika. 1 tablespoon
Turmeric. 1 tablespoon
Black pepper. 1/2 teaspoon
Salt. 1/2 teaspoon
Tips For Making The Best Potatoes In Tomato Sauce Dish
Cut the potatoes into the same size to ensure they cook evenly.
Avoid constantly stirring the potatoes when making this dish because they break easily.
Cooking the tomato sauce longer helps enrich the taste of the sauce.
You can also add some tomato paste for a smooth texture and a rich color.
If you are using canned tomatoes, adding a pinch of sugar helps balance the flavors and acidity.
I sometimes add baby spinach toward the end of cooking, it’s a personal preference.
Other vegetables that can be added to this dish include peas, zucchini, bell peppers, mushrooms, and more.
If you prefer meat, you can also add any meat of your choices like ground beef, ground pork, or chicken.
How To Make Potatoes In Tomato Sauce
Heat 2 tablespoons of cooking oil in a large saucepan or skillet, add onion and sauté for about a minute.
Add a can of tomatoes, cover with a lid and cook for 3 minutes. Add tomato paste and a pinch of brown sugar and cook for about a minute. Season the tomato sauce with salt & pepper as needed.
Once the tomato sauce is cooked and well-seasoned, add the peeled, and evenly cut potatoes.
Add a cup of water, cover with a lid and simmer for about 15- 20 minutes or until all the liquid cooks up, and the potatoes are soft in thick tomato sauce.
Lastly, add some spring onion and serve.
The good thing about this dish is that it’s vegan-friendly, and you can serve it as a main vegan dish.
I have made this potato dish countless times and I like serving it with different kinds of dishes.
