You make this salad with avocados, broccoli, cucumbers, and boiled eggs and tossed in a zesty fresh lemon juice and olive oil dressing.

You can to add it inside some fresh bread or dinner rolls to make a delicious sandwhich.

You can make this shrimp salad recipe in 20 minutes and can substitute some of the ingredients to your liking.

In this recipe, I used seared shrimp because it has so much flavor compared to boiled shrimp.
What I love about this salad is that you can substitute some of the ingredients and use whatever you like.

You can also use fresh ingredients like baby spinach, arugula, kale, and more.

If you don’t like eggs, you can substitute them with cherry tomatoes and olives.
Don’t be afraid to experiment with other ingredients that you have in your kitchen.

Ingredients
  

  • 1 cup shrimp peeled You can also use other types of seafood, such as salmon.
  • 1 Large Avocado chopped Make sure to use a ripe avocado but not too ripe.
  • 1 Cup Boiled Broccoli
  • 2 Boiled eggs
  • 1/4 cup Chopped
  • 1 tablespoon salted butter You can also substitute butter with a tablespoon of olive oil.
  • 2 tablespoon s freshly squeezed lemon juice Lemon juice, can be substituted with your favorite vinegar or with fresh lime juice.
  • 1/2 teaspoon mustard
  • 1 teaspoon brown sugar
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 tablespoon fresh thyme or parsley When using parsley, avoid using the stems because they have a strong and bitter taste
  • 2 tablespoons mayonnaise You can leave out mayyonaise if you don't like it.
  • A pinch of salt Adding a pinch of salt to your lemon dressing helps to balance the flavors.
  • A pinch of paprika You can use a pinch of paprika and parsley to sprinkle on your salad right before serving.

Instructions
 

  • Sear Shrimp:  Heat a pan over medium-high heat until hot.Add a tablespoon of salted butter. Add shrimp to the pan and sear for a minute or until it starts to become pink around the edges, then flip and cook until the shrimp are cooked through, in less than a minute. Transfer shrimp to a plate and let them cool while you prepare other ingredients.
  • Boil Eggs: Boil 2 eggs for 5-6 mins and transfer them to a bowl filled with cold water and let them cool. Chop the eggs into bite-size pieces and set aside.
  • In a small bowl combine lemon juice, mustard, olive oil, brown sugar, black pepper, fresh thyme, a pinch of salt, and mayonnaise. Leave for 5 minutes to let the flavors combine.
  • Assemble Salad: Combine shrimp, avocado, broccoli, boiled eggs, chopped cucumber, and lemon dressing in a large mixing bowl, and mix until well mixed. Season with extra salt and pepper to taste, sprinkle some paprika or parsley and serve.
